The currents that come from the Antarctica have a decisive influence on the climate of the Chilean coast. The latter is characterized by dense coastal fogs called “camanchacas” or “garúas” that cover the sky. The absence of rain and the colder than usual temperatures for this latitude, allow these
fogs to penetrate inland of the valleys, and the fresh breezes to blow from the sea to the continent during the afternoons. 

These conditions, typical of the Chilean Coastal Range, added to the great thermal amplitude between day and night during the summer, are ideal for our cold climate varieties to reach their best ripeness in a slow and even condition.

Cabernet Sauvignon – Syrah | 2019

ORIGIN

The fruit comes from selected plots of the San Bernardo vineyard in the Maipo Valley, which is famous for the production of great-quality red wines. The loamy-clay soils of alluvial origin also have gravel in the third layer of the profile. The fresh, dry climate provides an ideal terroir for producing structured, elegant red wines with long persistence.

VINIFICATION

In harmony with Viña Vistamar’s spirit, the harvest and se ection of the grapes was carried out manually for both varieties. Pre-fermentative cold maceration for five days They underwent later a controlled fermentation process in stain ess steel tanks and then, a post-fermentative maceration of 7 to 10 days, and were aged in French and American oak barrels for approximately 16 months.

Climate: Semiarid Mediterranean, with large temperature variations between day and night.
Soil: of alluvial origin and clay loam texture.

TASTING NOTE

Color: intense dark violet.
Aroma: it oers notes of bitter-sweet chocolate and black
cherries.
Taste: it features a pleasant acidity with elegant and velvety
tannins.
T°: Serve at 16° C.
Match food: red meats, lamb and ripe cheeses.

HARVEST REPORT

Harvest Report: the 2018 vintage is marked by high temperatures presented in the months of January, February and March, which resulted in a harvest earlier than normal. It was a year of low production and yields in Casablanca, but with a great concentration on the resulting wines.

 

Ageing: the Chardonnay was aged for 8 months in French oak barrels.

VINIFICATION

The grapes were pressed immediately upon arriving at the cellar. The juice was decanted and then partially fermented in barrels and the rest in stainless steel tanks. The resulting wine was held on its lees until blending and bottling. The Viognier component (15%) was cold macerated prior to fermentation, then decanted and fermented entirely in stainless steel with no oak contact.

WINEMAKER’s NOTE

Colour: light yellow.

 

Aroma: tremendous fruit intensity with citrus and mineral notes along with exotic and tropical notes from the Viognier accompanied by a touch of vanilla.

 

Taste: fresh and elegant with very pleasant, suggestive acidity and strong, appetising tannins.

 

Tº: 8º–12ºC.

ANDES RED

2017

Cabernet Sauvignon 45% / Petite Syrah 20% / Petit Verdot 20% / Carmenère 15%

All these grapes come from our estate La Moralina, strategically located in
Cachapoal Andes and a few minutes from our wine cellar.
Well-drained soils of alluvial-colluvial origin: limey clayey-loam with an
abundance of stones. Temperate Mediterranean climate with wide
temperature swings between day and night.

HARVEST REPORT

During the season were presented good weather conditions, with a long dry due to the lack of rain vintage, but with spring frosts were noted in a slight decrease in yields. Fruit wines are shown, with good concentration of tannins and a fresh and spicy character.
Handpicking: extended from mid-April, starting with Cabernet Sauvignon of the highest parts of the field, until mid-May with Carmenère ending.

 

Aging: 12 months of aging in French oak barrels (60%) and American (40%)

VINIFICATION

In stainless steel tanks. The must was inoculated with selected yeasts for controlled fermentation at 26º–28ºC. The number and duration of pumpovers were determined daily by enological tastings.

WINEMAKER’s NOTE

Colour: Deep ruby red with violet nuances beginning to show some evolution.

Aroma: Fine, clean, attractive, juicy, with aromas of ripe and sweet fruits, blueberries, with an elegant touch of rosemary and cedar.

Taste: Juicy and fresh with lively acidity. Flavorful, well structured, and full of smooth tannins.

Tº: 16° and 18° C.

Keeping potential: 8 years.
